Veggie Fritters

❄️Serve fresh from the pan, refrigerate or freeze.

To make the fritters I used grated raw carrot, chopped cooked broccoli, and sliced spring onions / scallions in my fritters, but you can use whatever you fancy and have in the house.

Ingredients:

  • - 1 cup chopped veg

  • - 1/4 cup grated cheese

  • - 1 egg

  • - 3 tbsp SR flour

Method:

  1. Mix the veg with the beaten egg, cheese and flour.

  2. Pan fry in a little oil, turning over when the base is golden and firm.

  3. Serve.

Egg Free Version

  • Replace the egg with a flax seeds or chia seeds... simply mix 1tbsp ground flax seeds or chia seeds with 3tbsp water and leave to thicken for 5-10 minutes to thicken. Then use in the place of the egg.

  • When using flax or chia seeds you may need to add a little more liquid if the mix seems a little dry.

  • The finished fritters usually have a more fragile texture than those made with egg - leave them to cool slightly before serving to help them firm up.
