Chicken & Chorizo Paella With Rye & Pumpkin Seed Bread

🥄 NOTE: chorizo is an optional choice due to the salt content, just miss this ingredient out or swap for an alternative.
Ingredients:
- 
Chicken stock 
- 
1 diced onion 
- 
1 red pepper 
- 
300g paella rice 
- 
100g frozen peas 
- 
1/2 tsp dried chilli flakes 
- 
1 tbsp parsley 
- 
2 medium tomatoes 
- 
100g chorizo sliced 
- 
400g of chicken breast 
- 
2 crushed garlic cloves 
- 
3 tbsp paprika 
Method:
- 
• Cook the chicken for 3 mins and add the chorizo and onion and continue to cook on a medium heat for another 3 mins. 
- 
• Add the garlic, chilli flakes and paprika and turn heat down and cook for another 3 mins. 
- 
• Add pepper, tomatoes, chicken stock and paella rice and bring to the boil, simmer for 15 minutes. 
- 
• Add the frozen peas and continue to simmer for a further 5 minutes by which time the stock should have been absorbed. 
- 
• sprinkle of chopped parsley before serving.
