Creamy Prawn and Tomato Spaghetti
Here is a prawn spaghetti recipe that can be adapted to please the whole family. Itās super simple with simple ingredients that add a big boost of flavour. It is also simple to make in a speedy amount of time!Ā

You will need:Ā
2 servings of thin, quick cook spaghetti
6 large cooked prawns
1/2 red onion, finely diced
6 cherry tomatoes, halved
120ml double cream
150ml low salt vegetable stock
2 small garlic cloves, minced
1 1/2 tbsps butter
1 1/2 tbsps flour
Ā 1 tsp dried oregano
Ā 1/2 a lemon
Ā Black pepper
Ā 1 tbsp chopped fresh parsleyĀ
Ā Parmesan, for topping (optional)

Method:
Cook your spaghetti in salted boiling water and drain. Coat in a little olive oil and return to pan (this avoids the pasta sticking)
In a frying pan, add a drizzle of olive oil over a medium heat. Add your onion and garlic and cook for 2 minutes
Add your butter and flour and mix to well combined
Add your stock, oregano, lemon juice and double cream and mix
Go ahead and add your tomatoes and a grinding of black pepperĀ
Next add your prawns and cook for 2-3 minutes to warm through
Finally add your parsley and cooked pasta and give it a good stir. Serve with Parmesan on top, delish!
