Easy Courgette Pasta 🥒

👶🏻 Suitable from 6 months, for baby under 8 months serve it with a large pasta shapes, easier for baby to hold

❄️ Store in the fridge in a airtight container for a couple of days
Ingredients:
(serves 3)
- 
200-250g dried pasta 
- 
2 medium/large courgettes 
- 
1 garlic clove, minced OR 1 tsp lazy garlic 
- 
Salt and pepper to taste* 
- 
2-3 tbsps grated Parmesan (you can substitute with nutritional yeast/vegan cheese or leave out) 
*NOTE: avoid or reduce if cooking for babies, I usually adjust my meal with salt after having serve my little one
Method:
- 
Cook pasta according to package directions. 
- 
Meanwhile, cook the finely chopped garlic with the olive oil in a pan over medium high heat until golden. 
- 
Reduce heat to medium-high, add sliced courgettes and cook for 10-15 minutes until softened and lightly browned, stirring occasionally. 
- 
Season with salt and pepper, give everything a good stir and cook for another couple of minutes. 
- 
Remove from the heat. 
- 
Add the cooked pasta to the courgettes, a few tablespoons of grated Parmesan and mix well (add more olive oil if pasta result too dry). 
- 
Sprinkle with more grated Parmesan if desired. 
-
