French Toast Jammy Dodgers

👶🏻 Suitable from 6 months

For the egg mixture -
🔹 1 small egg
🔹 1 mashed banana
🔹 1 tsp ground cinnamon
🔹 Dash of milk
🔹 1 tsp vanilla

For the dodgers -
🔹 2 slices of bread
🔹 1 tbsp of coconut oil
🔹 1 tbsp of homemade blueberry (or any fruit) jam (see previous posts for recipe!)

🔹 Combine all the eggy mixture together in a shallow wide bowl and whisk together until well combined
🔹 Put the coconut oil in a large frying pan over a medium heat
🔹 Dip 1 slice of bread in the eggy mixture and coat well on both sides and place in the frying pan. Repeat with other slice of bread
🔹 Fry on both sides until browned and then remove from pan
🔹 Using a circle cookie cutter, cut out 6 circles from the bread slices. Using a smaller cookie cutter, cut out the middle of 3 of the circles.

Sandwich together and serve! Delisssh!
