Recipe for 8 muffins or 1 small pan of oatmeal bake:
▪️1 mashed banana
▪️60 grams porridge oats
▪️40 grams granola (the granola I used had a few dark chocolate chunks in it)
▪️8 tbsp any milk (I used almond)
▪️1 egg slightly beaten
▪️2 tbsp maple syrup
▪️1/2 tsp cinnamon
▪️1/2 tsp baking powder
▪️Splash of vanilla extract
▪️Handful of dried cranberries
🔸Preheat the oven at 170 degrees and grease your muffin tray or pan if you are using a metallic one. I used silicone so this step can be skipped.
🔸Mash the banana with a fork first and add it into a bowl.
🔸Move on by folding all the rest of the ingredients in the bowl starting from the wet ones and moving to the dry ones. Mix them very well until you have a slightly thick batter almost same consistency with the oat pancakes batter.
🔸Pour in the mixture inside each muffin slot and cook for about 20 mins on 170 degrees.
