Mediterranean Fish Pie

Ingredients for the filling:
- 
2 cod fillets 
- 
1 tin white beans 
- 
1 tin chopped tomatoes 
- 
1 onion 
- 
1 carrot 
- 
8 - 10 cherry tomatoes 
- 
1 clove garlic 
- 
1 tsp paprika 
- 
Juice of 1/2 lemon 
- 
Handful of fresh basil 
- 
Handful of fresh parsley 
- 
Handful of spinach 
Method:
- 
Dice the fish and finely dice the onion, garlic, carrot, tomatoes and herbs. 
- 
Sauté the onion until translucent then add the garlic and carrot. Cook until the carrot begins to soften. 
- 
Add the tinned tomatoes, cherry tomatoes and paprika. Bring to a simmer then add the beans and fish. 
- 
Cook on a low heat for 10-15 minutes until the fish is just cooked. 
- 
Add the herbs, spinach and lemon juice. 
- 
Top with mash and a sprinkle of cheese and bake for about 20 mins, until the cheese is golden.
