Puff Pastry Pinwheels

You will need -

* 1 sheet of ready rolled puff pastry

* Small serving of homemade jam (I had blueberry)

* 1 egg (whisked)

* Water
How to make the blueberry jam -

* Using 200g over-ripened blueberries, put them whole in a small saucepan over a medium heat

* Add 70ml cold water to the pan and stir

* Add 3 tbsps chia seeds with 1 tbsp of Sweet Freedom fruit/vanilla syrup

* As the blueberries start to soften, squash them with your spoon to break them down. Once all berries have burst, remove from the heat to allow the jam to thicken (the chia seeds will soak up the moisture)
How to make the pastries -

Pre-heat your oven to 220c (425f)

For this recipe I’m using ready rolled puff pastry. It’s so much easier! Cut your sheet into 4 or 6 squares (depending on how big you want them) using a pizza cutter

Place each square onto a parchment lined baking tray

Place 1-2 teaspoons of your jam in the center of each square (put the leftover jam in the freezer in individual portion pots)

Make slits on the corners of each square using the pizza cutter

Fold one corner of each triangle piece towards the center. Press down firmly. Repeat with remaining corners!

Mix the egg and water together in a bowl and brush egg wash across entire surface of pastry

Sprinkle with sugar (optional, I used a bit of coconut sugar!)

Bake in the oven for 15 minutes until brown and crisp! Wait 5 mins before eating as the jam will be hot! Any leftovers, place in the freezer for another day! Enjoy!
