Spinach, Mint and Pea Falafels
These are high in iron and an easy texture for little ones to eat. Serve with roast veggies, tzatziki and flat bread or pitta.
3 handfuls of spinach
3 tbsp green peas
4 springs fresh mint
2 cloves of garlic
1 tsp honey (or fruit syrup or a diced dried apricot for under 1s)
4 tbsp gram flour
1/2 tsp ground coriander
Juice of half a lemon
1tsp of olive oil (plus more for cooking)
A little pinch of salt for toddlers+ (not for baby)
1. Add all ingredients to a food processor (or a bowl of using a hand blender) and blend until you have a paste.
2. Heat 1 tbsp of oil in a pan.
3 Use your hands or a teaspoon to add small balls of the mixture to the hot pan.
4. Turn gently and frequently until they are golden and crisp all over, reducing the heat once they start to brown.
